Zesty limes and chalky minerality combined with lingering floral notes, grapes were harvested in the coolness of a Great Southern morning to maintain the fragility and purity of great riesling fruit. Crushed and pressed to tank and then racked and inoculated with a pdm yeast and after ferment the wine was fined and bottled to maximise freshness.

This wine makes us think of sitting in the sun, drinking a glass of Great Southern riesling with fresh sashimi, we like Bluefin tuna, stripy trumpeter and uni. Any unadulterated seriously fresh seafood will work fabulously.
Willoughby Park was established in early 2000 in the Great Southern region of Western Australia. It comprises of two sites Kalgan River and the Brewery Vineyard, planted out to traditional varieties of Cabernet and Chardonnay but also given its cooler climate we see Pinot Noir and Nebbiolo and a big planting of Shiraz.
