As with all Fume styles, Sauvignon Blanc was fermented on lees and matured in French Oak and this example is no different. These grapes were sourced from Coonawarra. The lee's and oak components dish out dollops of creamy goodness backed with a lovely tropical fruit presence. The wine is expressive and complex with subtle oak layers with tropical fruits intertwined. As the wine is allowed to breathe, these layers become more evident and enjoyable to explore.

Like many dry whites that are fruit forward in nature, they typically work well with lightly grilled fish, oysters and sashimi. However we like to spice things up - much like Bridget Jones at a fancy dress party, we think this wine should be paired with a spicy Andalusian Gazpacho.
Patrick of Coonawarra is funnily enough from Coonawarra, South Australia, established by the celebrated winemaker Patrick Tocaciu. Over 3000 vines have been planted and in 2011 a further vineyard was purchased and planted out to aromatic white varietals and more Cabernet. To diversify the range, he went in deep and purchased land in the Wrattonbully region containing 3 red varieties and 3 white. These people obviously love their Cabernet hence why they produce 4 different labels with the same variety. We must admit we like it too.
