Tasting Notes

The Bonadale Pinot is unfiltered and un-fined which leads to an expressive nose displaying floral notes, followed by forest floor, tea leaf and wild berries. This vintage was really suited to Pinot and is from the Bonadale site, being the most elevated and diverse of the Ghost Rock sites. The selected clones (Burgundy & California) were hand picked at their best and wild fermentation took place in a 3500L Burgundian Oak Vat. Following fermentation, wine was placed in French Oak Barriques of which 38% was new and all of which has created a palate of weight, texture and length.

We like Tassie Pinot in particular for its versatility and overall food matching ability. Pair with dishes like wild venison and cygnet mushroom ragout or for a lighter pairing we recommend confit vanilla duck leg served with a compressed watermelon, roquette and mint salad. Hello Summer.
