The fruit is sourced from the Belice Valley which is 600 metres of sea level and provides the perfect microclimate for quality Pinot Grigio fruit, picked early to maintain freshness and good acid structure, essential for great sparkling. There is light touches of pear and cut apple on the nose, white peach and apple on the palate which is finished with clean vibrant acidity and works wells as a great aperitif or last drink after a serious meal in the Sicilian sun.
